This week’s A-Z cooking with kids is all about CARROTS! My kids are not big carrot fans so I decided to sneak them in a yummy treat.  I figured they could not resist at least trying a cookie.  Of course, making the cookies even if they did not eat them would be a lot of fun.  My kids and I love getting in the kitchen and creating fun eats together.  Now let’s see how the Oatmeal Carrot Cookies turned out and if they were a hit, or not!

Oatmeal Carrot Cookies

What we used/ Ingredients:

 

carrots- 1/2 C or more depending on the person

 

self rising flour- I love White Lilly. 1 C

 

Crisco Sticks – 3/4 C

 

light brown sugar – 1 C

 

vanilla extract- 2 TSP

 

oats- 2 1/2 C

 

eggs- 2

 

cinnamon – as much as you like we just shook it!

What we did/ How to make:

 

Preheat oven to 375 degrees F.  I line my cookie sheets with foil.  Take a large mixing bowl and add Crisco first.  Next add light brown sugar.  Mix well.  Using a mixer is awesome for making cookies and I do it often.  However, today we made them just like I did with my mom, and we mixed it with a spoon and our hands.  Now add eggs, cinnamon, and vanilla.  Mix well. Now add flour and mix again.  Last 2 things to add are our carrots that have been shredded and oats.  I use a Baker’s Secret Cookie Dough Scoop and drop cookie dough on to my foil covered pans.  Bake for 9-12 mins.  Or until golden on top.  Let cool and eat!!

The kids took turns pouring and mixing.  We had fun mixing up some oatmeal carrot cookies to try.  To my surprise they liked them.  Yay, cookie success.
