Energy Bites or Oat Bites
I have been on my cell phone a lot during late night feedings with baby brother.  It is what keeps me awake.  I have actually had the time to go back and look through my personal pinterest account boards.  Wow, I have some cool stuff in there I totally forgot about.  These energy bites were one of the things in there.  The recipe comes from Smashed Peas and Carrots.  They have the recipe listed and then have updated with many substitution possibilities.  You should click on link to get a few ideas of the things you may have to make them.  
 
I did not have everything listed from the main recipe so I decided to add my own substitutions. The kids had fun helping me make them by adding all the ingredients.  Once we had the mix ready for the fridge we had to wait to eat them.  This was the only hard part about this.  When we finally  got to try them we all thought they were yummy.  These were a big hit at my house.

This is what we used: 
 
1 c oats, 1/2 c peanut butter, 1 c raisins, 1/3 c honey, 1/2 c coco powder, 1/2 c mini cho. chips, and a tsp vanilla extract. 
 
You mix it all together.  I used a cookie scoop to make the balls or bites.  Then place in fridge 30- 1hr and pull out to eat.  Just get out what you want to eat and leave the rest in the fridge in a plastic bowl with lid or plastic bag.  
 
These were so good we had to make more in the middle of the week.  For that batch I added graham cracker crumbs instead of the coco powder.  Either way you make it they are good.  I called the second batch oat bites.  We hope you can enjoy these as much as we have.  What would you mix in to yours?
