Mexican Soup


I made Chicken enchiladas this week.  I love my crock pot.  So I decide to put my chicken breast in it with the meat seasoning( I had a enchilada dinner kit, it has the seasoning packet in it) and some Adobo all purpose seasoning.  I cooked the chicken on high for 7 hrs(my chicken was a little frozen).  After making the enchiladas I still had shredded chicken left over about 3 cups. I put it in the fridge and stated thinking what should I make with it.  I looked up Mexican and tortilla soup recipes and came up with this one myself.

What I used:

3 cups shredded Chicken
1 can chili beans
1 can black beans
1 can corn-drained
1 can tomato SAUCE
1 can chicken broth
and a sprinkle of garlic & onion powder to my liking.  

What I did:

Bring to a boil in a pot and then simmer for 30 min to 1 hr. 
When done I served with crushed corn chips and shredded Munster cheese(a favorite at my house).  I am sure the ideas for toppings are endless.

Quick and easy dinner from leftover chicken.  Now we have a new recipe to make in the future.
