Mexican Sopes Recipe
I love getting in the kitchen with my mom. She had us in the kitchen when we were little and I love the memories I have of us cooking. I love now that when we get together to prepare a meal that my kids can get in the kitchen with both of us and cook. Creating memories with them now. Since it is National Hispanic Heritage Month I thought this would be a good excuse to have her over to share her Mexican Sopes Recipe with me.We could celebrate our Hispanic culture and our family with a great meal. Now lets cook and make new memories with the kids.
Mexican Sopes Recipe
Fun fact:
National Hispanic Heritage Month runs from September 15th til Oct 15th. Started in 1968 by President Lyndon. To start, it lasted for a week but later President Reagan had it set to last a month. During this time we celebrate the contributions of Hispanics and their presence in the USA.
Ingredients:
masa
water
Munster cheese shredded
lettuce
Mexican crumble cheese
refried beans
I already had our ground beef cooked. I used taco seasoning packets to flavor the meat.
You can substitute or mix and match the toppings to what you like. Add tomatoes or do not add meat…
How to make Sopes:
Add 3 cups of masa to a bowl. We filled our measuring cup with 1.5 cups of water to start. Form a well in the masa. Add a little water at a time and mix with your hands. Keep adding water until it is moldable. Be careful as you do not want the dough sticky.
Now take the dough and form small to medium sized balls. Take those balls of dough and flatten them in your hands. Now place them on a skillet and cook until you see a little brown. While still hot once you take them off the skillet, pinch the sides up.
My mom then places them in a little oil and fries them a few minutes.
Now it was time to eat. We filled the sopes with refried beans, meat, cheese, and lettuce.
Now my kids will have memories of cooking in the kitchen with my mom too. So glad she came over to share her recipe with us. We had a great time cooking and sharing a meal together as a family.
